Fruit & Rice Salad
Cook 2 cups of brown rice according to package directions. Slice 1 cup of grapes and peel/section 2 small oranges (or clementines). Drain 1 cup of crushed pineapple and reserve juice. Add rice and fruit to a bowl and stir; pour pineapple juice on top. Season with favorite TippiTopper to taste.
I like this recipe because it is very versatile. If you are scrambling to put together a hot lunch and don’t have these exact ingredients you can easily substitute. Really any fruit you have on hand will work. Nuts and dried fruit also work well in this recipe.
